Prepare the Tofu
Drain and press the firm tofu to remove excess moisture. Once pressed, crumble the tofu into small pieces.
Cook the Tofu
In a skillet, heat olive oil over medium heat. Add the crumbled tofu, chipotle peppers, cumin, smoked paprika, and salt. Stir well and cook for about 5-7 minutes until the tofu is heated through and slightly crispy.
Assemble the Quesadillas
In a large bowl, mix the cooked tofu with black beans, corn, and chopped cilantro. Place a tortilla in a clean skillet over medium heat. On one half of the tortilla, spread a portion of the tofu mixture and top with shredded cheese. Fold the tortilla over.
Cook the Quesadillas
Cook for 3-4 minutes on each side until the tortilla is golden and crispy, and the cheese has melted. Repeat with remaining tortillas and filling.
Serve
Cut each quesadilla into wedges and serve with sour cream and lime wedges on the side.
