Kati Roll Preparation

    Prepare the Dough

    In a mixing bowl, combine whole wheat flour, salt, and 1 tablespoon of oil. Gradually add water and knead to form a soft dough. Cover and let it rest for 30 minutes.

    Marinate the Chicken/Paneer

    In another bowl, mix yogurt, garam masala, cumin powder, coriander powder, lemon juice, and salt. Add chicken or paneer pieces and marinate for at least 30 minutes.

    Cook the Filling

    Heat the remaining oil in a pan and add the marinated chicken or paneer. Cook until fully cooked through, about 10-15 minutes. Add sliced onions and cook for an additional 2-3 minutes.

    Prepare the Roti (Flatbread)

    Divide the dough into equal portions and roll each portion into a flat circle. Cook on a hot skillet until both sides are golden brown.

    Assemble the Kati Rolls

    Place the cooked filling in the center of the roti, add chopped cilantro, sliced green chili (if using), and roll it tightly. Wrap in foil or parchment paper for easy grab-and-go.
