    Prepare the Pulled Pork

    In a slow cooker, combine pork shoulder, ponzu sauce, garlic, ginger, brown sugar, soy sauce, and black pepper. Cook on low for 8 hours or until pork is tender and easily shredded.

    Make the Jalapeño-Wasabi Aioli

    In a bowl, mix mayonnaise, chopped jalapeño, wasabi paste, lime juice, and salt to taste. Refrigerate until ready to use.

    Pickle the Vegetables

    In a saucepan, combine rice vinegar, sugar, and salt. Bring to a simmer, stirring until sugar dissolves. Pour over julienned carrot and cucumber in a bowl and let sit for at least 30 minutes.

    Assemble the Sandwich

    Shred the cooked pork and pile it onto hoagie rolls. Top with pickled vegetables, jalapeño-wasabi aioli, and chopped cilantro. Serve with your choice of side.
