    Prepare the Eggs

    Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium heat, then turn off the heat and cover the pan. Let the eggs sit for 10-12 minutes. Then, transfer them to an ice bath to cool. Once cooled, peel the eggs.

    Prepare the Sausage

    In a bowl, mix the sausage meat with salt and pepper. Divide the sausage mixture into 4 equal portions.

    Wrap the Eggs

    Flatten each portion of sausage meat and wrap it around a hard-boiled egg, ensuring it is completely covered. Repeat for all eggs.

    Coat the Eggs

    Set up a breading station with three bowls: one with flour, one with the beaten egg, and one with breadcrumbs. Dredge each sausage-wrapped egg in flour, dip in the egg wash, and then coat in breadcrumbs.

    Fry the Scotch Eggs

    In a deep pan or fryer, heat vegetable oil to 180°C (350°F). Fry the coated eggs in batches for about 5-7 minutes or until golden brown. Remove and drain on paper towels.

    Slice the Scotch eggs in half and serve warm with hot mustard on the side.
