    Boil the Eggs

    Place the eggs in a pot of cold water, bring to a boil, and cook for 8-10 minutes. Remove and place in an ice bath to cool.

    Prepare the Sausage Mixture

    In a bowl, season the pork sausage meat with salt and black pepper. Mix well to combine.

    Wrap the Eggs

    Once the eggs are cooled, peel them and roll each egg in the seasoned sausage meat, making sure to cover the egg completely.

    Bread the Eggs

    Dredge each sausage-wrapped egg in flour, then dip in beaten egg (if desired), and finally coat in breadcrumbs.

    Fry the Scotch Eggs

    In a deep pot, heat vegetable oil to 350°F (175°C). Carefully lower the breaded eggs into the hot oil and fry until golden brown, about 5-7 minutes.

    Serve

    Remove from oil and drain on paper towels. Serve hot with house-made hot mustard on the side.
