Prepare the Glass
Rinse a chilled Old Fashioned glass with absinthe, swirling it around the glass to coat the inside, then discard the excess.

Mix the Ingredients
In a mixing glass filled with ice, combine the rye whiskey, simple syrup, and Peychaud’s bitters.

Stir and Strain
Stir the mixture well until chilled, then strain it into the prepared glass.

Garnish
Express the oils from the lemon peel over the drink and drop it in as a garnish.
