Oven Roasted Salmon

Method

Preparation and Cooking

  1. 1

    Prepare the Salmon

Preheat the oven to 400°F (200°C). In a small bowl, mix olive oil, lemon juice, minced garlic, dill, salt, and black pepper. Place the salmon fillets on a baking tray lined with parchment paper and brush the mixture over the fillets.

  2. 2

    Roast the Salmon

Place the baking tray in the preheated oven and roast the salmon for about 12-15 minutes, or until the fish flakes easily with a fork.

  3. 3

    Make the Mashed Potatoes

While the salmon is roasting, peel and chop the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain the potatoes, then return to the pot, add butter and milk, and mash until smooth.

  4. 4

    Prepare the Vegetables

In a separate pot, steam the seasonal vegetables until just tender, about 5-7 minutes.

  5. 5

    Serve

Plate the roasted salmon alongside the mashed potatoes and steamed vegetables. Garnish with additional dill if desired.
