    Prepare the Dough

    In a large mixing bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5 minutes until frothy. Add the flour and salt, and mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Pretzels

    Preheat the oven to 450°F (230°C). Once risen, punch down the dough and divide it into 4 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

    Boil the Pretzels

    In a large pot, bring 10 cups of water to a boil and add the baking soda. Boil each pretzel for about 30 seconds, then remove and place on a greased baking sheet. Sprinkle with sea salt.

    Bake the Pretzels

    Bake the pretzels for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.

    Make the Cheese Sauce

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute. Gradually whisk in the milk and IPA beer, and continue stirring until thickened. Add the cheddar cheese, salt, and pepper, and stir until melted and smooth.

    Serve

    Serve the warm pretzels with the house-made cheese sauce for dipping.
