    Brown the Meat

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the lamb or beef stew meat and brown on all sides. Remove from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent. Add the sliced carrots and diced potatoes, and sauté for another 5 minutes.

    Combine Ingredients

    Return the browned meat to the pot. Pour in the broth, and add the fresh thyme, bay leaves, salt, and black pepper. Stir to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the meat is tender and the vegetables are cooked through.

    Taste and adjust seasoning with salt and pepper as needed. Remove bay leaves before serving.
