Cook the Pasta
In a large pot of salted boiling water, cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Add Milk
Gradually whisk in the milk, stirring constantly to avoid lumps. Cook for about 5-7 minutes until the mixture thickens.

Add Cheese
Remove the saucepan from heat and stir in the cheddar cheese and Parmesan cheese until melted and smooth. Season with salt, black pepper, and paprika.

Combine Pasta and Sauce
In a large bowl, combine the cooked penne pasta and the cheese sauce. Fold in the chopped corned beef until evenly distributed.

Prepare Garlic Bread
While the pasta is cooling, prepare the garlic bread according to package instructions or your preferred recipe.

Spoon the Irish Mac & Cheese into serving dishes and serve hot with garlic bread on the side.
