    Cook the Pasta

    In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden. Gradually whisk in the milk, ensuring no lumps form. Continue to cook, stirring frequently, until the mixture thickens.

    Add Cheeses and Seasoning

    Lower the heat and add the sharp cheddar cheese, Gruyère cheese, Dijon mustard, salt, black pepper, and paprika. Stir until the cheese has melted and the sauce is smooth.

    Combine Pasta and Corned Beef

    Fold in the cooked penne pasta and diced corned beef into the cheese sauce, mixing well to combine.

    Bake (Optional)

    Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a baking dish. If desired, sprinkle breadcrumbs on top for added texture. Bake for 20-25 minutes until bubbly and golden on top.
