Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar until well blended. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 8-10 minutes until lightly golden, then remove from the oven and let cool.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to beat until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the Irish cream liqueur and vanilla extract.

Combine and bake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Refrigerate the cheesecake for at least 4 hours or overnight. Before serving, top with whipped cream and dust with cocoa powder if desired.
