    Prepare the Potatoes

    Wash and dice the russet potatoes into small cubes. Boil them in salted water for about 5-7 minutes until slightly tender but not fully cooked. Drain and set aside.

    Dice the red and green bell peppers and onion into small pieces.

    In a large skillet, heat the olive oil over medium heat. Add the diced onions and cook until translucent, about 3 minutes. Add the bell peppers and cook for another 3 minutes.
