Grill the Chicken
Preheat the grill to medium-high heat. Brush the chicken breasts with olive oil, and season with salt and black pepper. Grill the chicken for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes.

Prepare the Bread
Toast the slices of bread on the grill or in a toaster until golden brown.

Assemble the Sandwich
Spread mayonnaise on one side of each slice of toasted bread. On the bottom slice, layer the grilled chicken, pepper jack cheese, lettuce, and sliced tomato. Top with the other slice of bread, mayo side down.

Serve
Cut the sandwich in half and serve with your choice of side, such as fries, chips, or a salad.
