Marinate Chicken

    Prepare Marinade

    In a bowl, mix olive oil, minced garlic, rosemary, thyme, lemon juice, salt, and black pepper. Add the chicken breasts and coat well. Cover and marinate for at least 30 minutes.

    Grill Chicken

    Preheat the grill over medium-high heat. Grill the marinated chicken for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest.

Make Mashed Potatoes

    Cook Potatoes

    In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to pot.

    Mash Potatoes

    Add butter, milk, salt, and black pepper to the drained potatoes. Mash until smooth and creamy.

Prepare Seasonal Vegetables

    Cook Vegetables

    In a large skillet, heat olive oil over medium heat. Add mixed vegetables, season with salt and pepper, and sauté until tender, about 5-7 minutes.

Make Salad

    Combine Salad Ingredients

    In a large bowl, combine mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and balsamic vinegar, and season with salt and pepper. Toss to coat.

Prepare Garlic Bread

    Make Garlic Butter

    In a small bowl, mix softened butter with minced garlic and chopped parsley.

    Toast Bread

    Spread the garlic butter mixture onto the sliced French bread. Place under the broiler until golden and crispy, about 3-5 minutes.
