    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and salt. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan.

    Bake the crust

    Bake the crust in the preheated oven for 10 minutes until lightly golden. Remove from the oven and let it cool while you prepare the filling.

    Make the filling

    In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add the sugar and continue to beat until well incorporated. Add the sour cream and vanilla extract, mixing until combined.

    Add the eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

    Bake the cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly golden.

    Turn off the oven and crack the door, letting the cheesecake cool in the oven for about 1 hour. Once cooled, transfer to the fridge and chill for at least 4 hours or overnight.
