Prepare the Crab Mixture
In a mixing bowl, combine the crab meat, bread crumbs, mayonnaise, Dijon mustard, egg, Old Bay seasoning, salt, and pepper. Mix gently until just combined.

Form the Crab Cakes
Shape the mixture into patties, about 2-3 inches in diameter. You should have around 4-6 crab cakes, depending on the size.

Make Hollandaise Sauce
In a double boiler, whisk together 3 egg yolks, 1 tablespoon of lemon juice, and a pinch of salt. Slowly drizzle in 1/2 cup of melted butter while whisking continuously until thickened and creamy.

Assemble the Dish
On a plate, place a crab cake, top it with a poached egg, and drizzle with hollandaise sauce. Serve alongside homefries.
