    Prepare the Patty

    In a mixing bowl, combine the ground sirloin and corned beef. Add Worcestershire sauce, salt, and black pepper to taste. Mix well and form into a patty.

    Cook the Patty

    Preheat a grill or skillet over medium-high heat. Cook the patty for about 4-5 minutes on each side, or until it reaches your desired doneness. During the last minute of cooking, place the Dubliner cheese on top to melt.

    Prepare the Special Sauce

    In a small bowl, mix together mayonnaise, ketchup, and mustard to create the special sauce.

    Assemble the Burger

    Toast the ciabatta bun lightly on the grill or in a toaster. Spread the special sauce on the bottom half of the bun, then layer with shredded cabbage, cooked patty with melted cheese, pickled onions, and the top half of the bun.

    Serve the Celtic burger with your choice of side.
