Prepare the Soda Scones
In a bowl, mix the self-raising flour, baking soda, and salt. Add the buttermilk and knead gently until a dough forms. Shape into a round and cut a cross on top. Bake at 200°C (400°F) for 15-20 minutes.

Poach the Eggs
Bring a pot of water to a simmer. Crack the eggs into a small bowl, then gently slide them into the water. Poach for 3-4 minutes until whites are set but yolks remain runny. Remove with a slotted spoon.

Prepare the Celtic Ham
Heat the Celtic ham in a pan until warmed through.

Assemble the Dish
On each plate, place the homefries or O'Briens, top with the warm Celtic ham, and finish with the poached eggs. Drizzle hollandaise sauce over the top and serve with freshly baked soda scone.
