Preparation Instructions

  1. 1

    Prepare the Dough

In a small saucepan, heat the milk until warm (about 110°F/43°C). Remove from heat and sprinkle the yeast over the milk. Allow to sit for about 5 minutes until foamy.

  2. 2

    Mix the Ingredients

In a large mixing bowl, combine flour, sugar, and salt. Make a well in the center and add the yeast mixture, beaten egg, and melted butter. Mix until a dough forms.

  3. 3

    Knead the Dough

Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.

  4. 4

    Let the Dough Rise

Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 to 1.5 hours or until doubled in size.

  5. 5

    Shape the Beignets

Once risen, punch the dough down and roll it out to about 1/4-inch thickness. Cut into squares (about 2x2 inches).

  6. 6

    Heat the Oil

In a deep fryer or large pot, heat the oil to 350°F (175°C).

  7. 7

    Fry the Beignets

Carefully drop the dough squares into the hot oil, frying a few at a time to avoid overcrowding. Fry until golden brown, about 2-3 minutes per side.

  8. 8

    Drain and Dust

Remove the beignets with a slotted spoon and drain on paper towels. Dust generously with powdered sugar before serving.
