    Prepare the Potatoes

    Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes them crispier.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature.

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with a paper towel. Working in batches, carefully add the potatoes to the hot oil, frying them for about 5-6 minutes or until golden brown and crispy. Remove them with a slotted spoon and place them on a paper towel-lined plate.

    Season the Fries

    While the fries are still hot, sprinkle them with salt, black pepper, paprika, and garlic powder to taste.
