    Prepare the Potatoes

    Peel and cut the potatoes into quarters. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes or until tender.

    Cook the Sausages

    In a skillet, heat olive oil over medium heat. Add the pork sausages and cook until browned on all sides and cooked through, about 10-12 minutes. Remove from skillet and set aside.

    Make the Mashed Potatoes

    Once the potatoes are fork-tender, drain the water and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

    Prepare the Gravy

    In the same skillet used for the sausages, add diced onions and sauté until translucent. Add your homemade or store-bought gravy and heat through.

    Serve

    On a plate, place a generous scoop of mashed potatoes, top with the sausages, and drizzle with gravy. Enjoy!
