    Make the Soup

    In a large pot, heat the vegetable broth over medium heat. Add the diced carrots, celery, potatoes, onion, and minced garlic. Bring to a simmer and cook for about 15 minutes or until the vegetables are tender. Stir in the dried thyme, and season with salt and pepper to taste. Keep warm on low heat.

    Prepare the Grilled Cheese

    While the soup is simmering, spread butter on one side of each slice of sourdough bread. On the unbuttered side of two slices, spread Dijon mustard, then layer Irish cheddar cheese. Top with the remaining slices of bread, buttered side up.

    Grill the Sandwich

    Heat a skillet over medium heat. Place the sandwiches in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Serve

    Slice the grilled cheese in half and serve alongside a warm cup of the vegetable soup.
