    Make the Roux

    In a large pot, melt the butter over medium heat. Once melted, add the flour and stir continuously for about 15-20 minutes, or until the mixture is a dark brown color.

    Sauté Vegetables

    Add the chopped onion, celery, green bell pepper, and minced garlic to the pot. Cook for about 5 minutes or until the vegetables are soft.

    Add Crawfish and Seasoning

    Stir in the crawfish tails, chicken broth, cajun seasoning, bay leaves, and salt and pepper. Bring to a simmer and let cook for about 20 minutes, stirring occasionally.

    Garnish and Serve

    Remove the bay leaves. Serve the étouffée over cooked rice and garnish with chopped green onions.
