    Prepare the Boil

    In a large pot, bring the water to a rolling boil. Add salt, crawfish boil seasoning, lemon (squeezed and dropped in), garlic cloves (smashed), and quartered onions.

    Cook the Vegetables

    Add the potatoes and corn to the boiling water. Cook for about 10-15 minutes or until the potatoes are tender.

    Add the Sausage and Crawfish

    Add the sausage to the pot and cook for another 5 minutes. Then, carefully add the live crawfish and stir gently.

    Boil the Crawfish

    Allow the crawfish to boil for about 3-5 minutes until they turn bright red. Turn off the heat and let them soak in the seasoned water for an additional 15-20 minutes.

    Serve

    Drain the crawfish and vegetables, then spread them out on a table covered with newspaper. Serve hot with additional lemon wedges and dipping sauce if desired.
