Prepare the Chicken

In a large pot, heat the olive oil over medium heat. Add the chicken thighs and brown them on all sides, about 5-7 minutes. Remove from pot and set aside.

Sauté Vegetables

In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.

Add Aromatics

Stir in the minced garlic and cook for an additional minute until fragrant.

Combine Ingredients

Return the browned chicken to the pot. Add the chicken broth, diced tomatoes (with juice), bay leaves, thyme, and Cajun seasoning. Mix well and bring to a boil.

Simmer

Reduce heat to low, cover, and let it simmer for about 30-40 minutes, or until the chicken is cooked through and tender.

Season and Serve

Remove bay leaves. Season with salt and black pepper to taste. Serve hot.
