Preparation
Clean the Seafood
Thoroughly rinse the fresh shrimp, scallops, mussels, salmon fillet, and squid under cold running water. Remove the shells from the shrimp and squid, and clean the mussels by scrubbing the shells and removing any beards.
Prepare the Marinade
In a medium bowl, whisk together the olive oil, minced garlic, lemon juice, chopped parsley, salt, and black pepper until well combined.
Marinating
Marinate the Seafood
Place the cleaned seafood into a large resealable plastic bag or a shallow dish. Pour the marinade over the seafood, making sure all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Cooking
Preheat the Grill
Preheat your grill to medium-high heat. If using a grill pan, heat it on the stovetop over medium-high heat.
Cook the Seafood
Remove the seafood from the marinade, allowing any excess to drip off. Place the shrimp and scallops on the grill first, cooking for about 2-3 minutes per side until they are opaque and cooked through. Next, grill the salmon fillet for about 4-5 minutes on each side, and finally, add the squid and cook for about 2 minutes per side until it is tender. Mussels should be placed on the grill until they open, about 5-7 minutes.
Serving
Serve the Seafood
Once all seafood is cooked, remove from the grill and serve immediately. You can garnish with additional fresh parsley and lemon wedges if desired.
