Spicy Tuna Martini

Prepare spicy tuna

Place the diced sushi-grade tuna in a bowl. Add soy sauce, sesame oil, sriracha, mayonnaise, lime juice and salt. Gently fold until evenly coated but still chunky. Taste and adjust heat with more sriracha if desired.

Chill glass and mix

Fill a martini glass with ice and cold water to chill while you build the cocktail. In a cocktail shaker, add the chilled vodka and optional dry vermouth, then add a scoop (about 1.5–2 tablespoons) of the prepared spicy tuna mixture. Add ice to the shaker.

Shake vigorously for 10–12 seconds to chill and lightly emulsify the tuna into the spirit. Strain the mixture through a fine mesh strainer (or double strain) into the chilled martini glass. The strainer will remove larger tuna pieces; leave a small amount of fine tuna remnants for texture, or press through for a smoother drink.

Garnish with pickled ginger and a sprinkle of toasted sesame seeds. Serve immediately with a small spoon or cocktail pick so guests can eat the tuna accompaniment.

Classic Cosmo

Chill a martini or coupe glass by filling with ice water and setting aside.

In a cocktail shaker, add vodka, triple sec, fresh lime juice and cranberry juice. Fill the shaker with ice.

Shake vigorously for 12–15 seconds until the shaker is cold to the touch and the mixture is properly diluted and chilled.

Discard ice water from the glass and double-strain the cocktail into the chilled glass to remove ice shards.

Express the oils of an orange twist over the drink or garnish with a lime wheel. Serve immediately.

Lemon Drop Martini

Prepare the glass rim: pour granulated sugar onto a small plate. Rub a lemon wedge around the rim of a martini glass, then dip the rim into the sugar to coat. Set the glass aside.

In a cocktail shaker, combine vodka, fresh lemon juice and simple syrup. Add ice and shake vigorously for 12–15 seconds until very cold and slightly frothy.

Double-strain the mixture into the prepared, chilled sugar-rimmed glass.

Garnish with a lemon twist (express the oils over the drink and drop it in). Serve immediately.
