Preparation and Cooking

    Marinate the Steak

    In a bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add the flatiron steak, ensuring it’s fully coated. Cover and marinate in the refrigerator for at least 1 hour or overnight for best results.

    Prepare the Roasted Garlic

    Preheat the oven to 400°F (200°C). Cut the top off the whole bulb of garlic to expose the cloves, drizzle with olive oil, and wrap in foil. Roast for about 30 minutes or until soft. Allow to cool, then squeeze out the garlic into a bowl.

    Make the Roasted Garlic Crema

    In a bowl, combine the roasted garlic, sour cream, lime juice, and salt. Mix well and set aside.

    Grill the Vegetables

    Heat a grill or grill pan over medium-high heat. Toss the bell peppers and sliced onion with olive oil, salt, and black pepper. Grill for about 5-7 minutes until tender and slightly charred.

    Cook the Steak

    Remove the steak from the marinade and grill over medium-high heat for about 5-7 minutes per side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing thinly against the grain.

    Prepare the Salsa Fresca

    In a bowl, combine diced tomatoes, red onion, cilantro, lime juice, and salt. Mix well and set aside.

    Assemble the Tacos

    Warm the flour tortillas on the grill. Layer the sliced steak, grilled vegetables, shredded lettuce, salsa fresca, and roasted garlic crema onto each tortilla. Fold in half and serve.
