Marinate the Steak
In a bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add the flatiron steak, ensuring it’s fully coated. Cover and marinate in the refrigerator for at least 1 hour or overnight for best results.

Make the Roasted Garlic Crema
In a bowl, combine the roasted garlic, sour cream, lime juice, and salt. Mix well and set aside.

Prepare the Salsa Fresca
In a bowl, combine diced tomatoes, red onion, cilantro, lime juice, and salt. Mix well and set aside.

Assemble the Tacos
Warm the flour tortillas on the grill. Layer the sliced steak, grilled vegetables, shredded lettuce, salsa fresca, and roasted garlic crema onto each tortilla. Fold in half and serve.
