Crispy Chicken

    Marinate Chicken

    In a bowl, combine buttermilk and salt. Add chicken breasts and marinate for at least 1 hour (or overnight in the fridge for best results).

    Prepare Breading

    In a separate bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

    Bread the Chicken

    Remove chicken from buttermilk, letting excess drip off. Dredge in the flour mixture until fully coated, shaking off any excess.

    Fry Chicken

    Heat vegetable oil in a deep pan over medium-high heat. Fry the chicken for about 6-8 minutes on each side or until golden brown and cooked through. Drain on paper towels.

Chipotle Maple Emulsion

    Prepare Emulsion

    In a blender, combine chipotle peppers, maple syrup, mayonnaise, and lime juice. Blend until smooth.

Garlic Aioli

    Make Aioli

    In a bowl, mix together mayonnaise, minced garlic, lemon juice, and salt until well blended.

Quick Pickled Onions

    Pickle Onions

    In a jar, combine sliced onions, vinegar, water, sugar, and salt. Stir well and let sit for at least 30 minutes.

Assembly

    Assemble Burger

    Spread garlic aioli on the bottom half of the brioche bun. Place crispy chicken on top, followed by lettuce, quick pickled onions, and a drizzle of chipotle maple emulsion. Top with the other half of the bun and serve with fries or salad.
