Cooking Chicken

Prepare the Chicken
Preheat a skillet over medium-high heat. Rub the chicken breasts with olive oil and coat with blackening seasoning on both sides.

Cook the Chicken
Place the chicken in the skillet and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a blackened crust. Remove from heat and let rest.

Make the Dressing
In a blender, combine anchovy fillets, garlic clove, lemon juice, Dijon mustard, salt, and black pepper. Blend until smooth, then slowly add olive oil while blending to emulsify.
Assembling Salad

Prepare the Salad
Chop the romaine lettuce and place it in a large bowl. Add croutons, cooked and sliced blackened chicken, cooked and chopped smoked bacon, and grated Parmesan cheese.

Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
