    Prepare the Potato

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potato and cook for about 5-7 minutes until tender and slightly crispy. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of olive oil. Sauté the onions, bell pepper, and mushrooms until softened, about 5 minutes. Season with salt and black pepper.

    Beat the Eggs

    In a bowl, whisk together the eggs, and add a pinch of salt and pepper.

    Cook the Omelet

    Pour the beaten eggs into the skillet with the sautéed vegetables. Cook over medium-low heat until the edges start to set, about 3-4 minutes.

    Add Filling and Finish

    Evenly distribute the cooked potatoes and shredded Gruyère cheese over one half of the omelet. Carefully fold the other half over the filling and cook for another 2-3 minutes until the cheese melts and the eggs are fully cooked.

    Serve

    Slide the omelet onto a plate, cut in half if desired, and serve immediately.
