Prepare the Squash Filling
Steam the butternut squash until tender, about 15 minutes. Once cooked, mash it in a bowl and mix in ricotta cheese, egg, and salt until smooth.

Make the Pasta Dough
In a large bowl, mix flour and a pinch of salt. Create a well in the center and add the egg. Gradually incorporate the flour into the egg until a dough forms. Knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Roll the Dough
Divide the dough into quarters. Roll out each piece to about 1/16 inch thickness using a pasta machine or rolling pin.

Fill the Ravioli
Place small mounds of squash filling on the rolled pasta, then fold over and seal the edges with water to create ravioli.
