    Cook the Orzo

    In a large pot of boiling salted water, cook the orzo pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Brown Butter Vinaigrette

    In a small saucepan, melt the unsalted butter over medium heat. Continue cooking, stirring frequently, until the butter turns golden brown and has a nutty aroma. Remove from heat and allow to cool slightly. In a bowl, whisk together the brown butter, apple cider vinegar, olive oil, salt, and black pepper until emulsified.

    Combine Salad Ingredients

    In a large mixing bowl, combine the cooked orzo, diced heirloom tomatoes, dried cherries, chopped candied walnuts, and arugula. Pour the brown butter vinaigrette over the salad and toss gently to combine.

    Taste and adjust seasoning if necessary. Serve the orzo salad chilled or at room temperature.
