Preparation Steps

  1. 1

    Prepare the Beef Tenderloin

Transfer the beef to a baking dish and roast in the oven for 20-25 minutes for medium-rare. Let it rest for 10 minutes before slicing.

  2. 2

    Make the Au Jus

In a saucepan, heat the beef broth over medium heat. Scrape the bottom of the skillet used to sear the beef to incorporate the flavorful bits into the broth. Simmer for 10 minutes.

  3. 3

    Assemble the Sandwich

Slice the rosemary baguette in half. Spread the bacon jam on the bottom half. Layer the sliced beef tenderloin on top, followed by slices of Gruyère cheese. Place the top half of the baguette on the sandwich.

  4. 4

    Serve

Cut the sandwich into portions. Serve warm with the au jus on the side for dipping.
