Method

Preparation

  1. 1

    Marinate the Protein

In a bowl, combine olive oil, lime juice, minced garlic, cumin, paprika, chili powder, salt, and black pepper. Mix well. Add the chicken or steak, ensuring it's fully coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

  2. 2

    Prepare the Vegetables

While the protein is marinating, slice the bell peppers and onion into thin strips. Set aside.

Cooking

  1. 3

    Grill the Protein

Preheat a grill or grill pan over medium-high heat. Remove the protein from the marinade and discard the marinade. Grill the chicken or steak for about 5-7 minutes per side or until fully cooked (internal temperature should reach 165°F for chicken, 145°F for steak). Remove from grill and let rest for a few minutes before slicing.

  2. 4

    Sauté the Vegetables

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced bell peppers and onion. Sauté for about 5-7 minutes until they are tender and slightly charred.

Assembly

  1. 5

    Assemble Your Fajitas

Slice the grilled chicken or steak into strips. Serve hot with sautéed vegetables, tortillas, sour cream, shredded cheese, salsa, and chopped cilantro. Let everyone build their own fajitas.
