Preparation
Prepare the Ingredients
Chop the bell pepper, onion, celery, and slice the green onions. Mince the garlic and set aside.
Slice the Sausage
Cut the Andouille sausage into bite-sized pieces.
Prep the Chicken
Trim any excess fat from the chicken thighs and cut into bite-sized pieces.
Cooking
Cook the Sausage
In a large pot over medium heat, add the Andouille sausage and cook until browned, about 5-7 minutes.
Add Chicken
Stir in the chicken thighs and cook until they are no longer pink, about 5 minutes.
Add Tomatoes and Seasoning
Pour in the canned diced tomatoes, chicken broth, Cajun seasoning, bay leaves, salt, and black pepper. Stir well to combine.
Simmer the Mixture
Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes.
Add Shrimp and Rice
Stir in the shrimp and rice. Cover and cook for an additional 20 minutes, or until the rice is tender and the shrimp are cooked through.
Final Touch
Remove bay leaves, taste for seasoning and adjust with salt and pepper as needed. Stir in the sliced green onions before serving.
