Chop the Vegetables

Dice the bell pepper and onion into small pieces. Mince the garlic and set all vegetables aside.

Prepare the Beans and Tomatoes

Open the cans of pinto beans and diced tomatoes, and drain the beans. Have them ready to mix into the dish.

Cooking

Cook the Meat

In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and chorizo sausage. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Add Vegetables

Add the diced bell pepper, onion, and minced garlic to the skillet. Sauté for another 5 minutes until the vegetables are softened.

Season the Mixture

Sprinkle the Cajun seasoning over the meat and vegetable mixture. Stir well to evenly coat everything with the spices.

Incorporate Beans and Tomatoes

Add the drained pinto beans and the canned diced tomatoes (with their juices) to the skillet. Stir well to combine all ingredients.
