Preparation

    Cook the Rice

    Prepare 2 cups of cooked rice according to package instructions. Set aside.

    Prepare the Meat

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 cup of ground beef or chicken and cook until browned. Drain excess fat.

    Add Seasoning

    Sprinkle 1 tablespoon of taco seasoning, 0.5 teaspoon of salt, and 0.5 teaspoon of pepper into the meat. Stir well to combine and cook for an additional 2-3 minutes.

    Heat the Beans

    In a small saucepan, heat 1 cup of canned black beans over low heat until warm.

Assembly

    Fill the Tortillas

    Take a flour tortilla and layer 0.5 cup of cooked rice, 0.25 cup of seasoned meat, and 0.25 cup of warm black beans in the center.

    Add Toppings

    Top the filling with 0.25 cup of shredded cheese, 2 tablespoons of sour cream, 2 tablespoons of salsa, 0.25 cup of chopped lettuce, and 0.25 cup of diced tomatoes.

    Roll the Burritos

    Fold the sides of the tortilla inward and then roll from the bottom up to enclose the filling. Repeat with remaining tortillas.

Serving

    Serve

    Cut the burritos in half if desired and serve warm with additional salsa or sour cream on the side.
