Prepare the Turkey
Thaw the turkey if frozen. Remove the giblets and neck from the cavity, then rinse the turkey under cold water and pat dry with paper towels.

Season the Turkey
Rub the turkey all over with olive oil. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, black pepper, and salt. Rub this spice mixture all over the turkey, including inside the cavity.

Soak the Wood Chips
In a bowl, soak the apple wood chips in water for at least 30 minutes before smoking.

Prepare the Smoker
Preheat your smoker to 225°F (107°C). Drain the soaked wood chips and add them to the smoker box or directly onto the coals.

Smoke the Turkey
Place the turkey on the smoker rack, breast side up. Insert a probe thermometer into the thickest part of the breast, ensuring it doesn't touch the bone. Smoke the turkey for about 30 minutes per pound, or until the internal temperature reaches 165°F (74°C).

Once done, remove the turkey from the smoker and let it rest for at least 20-30 minutes before carving.
