Prepare the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, garlic powder, onion powder, salt, and black pepper. Gradually add the cold sparkling water and mix until just combined. The batter should be thick.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Fry the Cheese Curds
Dip the cheese curds into the batter, ensuring they are fully coated. Carefully drop them into the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Serve the fried cheese curds hot with the chili-ranch sauce on the side for dipping.
