Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer until the batter is smooth and well combined.

Heat the Oil
In a deep frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cod
Dip each cod fillet into the batter, allowing excess to drip off. Carefully place the battered cod into the hot oil and fry for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Assemble the Sandwich
Toast the brioche buns lightly. On the bottom half of each bun, place a fried cod fillet, top with a slice of cheddar cheese, a generous amount of coleslaw, and a drizzle of remoulade sauce. Close the sandwich with the top half of the bun.

Serve the cod fish sandwiches immediately while hot with your favorite side.
