Cooking the Pork Belly

Prepare the Pork Belly
Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat. Rub the pork belly with salt, black pepper, and five-spice powder. Let it marinate for at least 1 hour, or overnight in the fridge for better flavor.

Cook the Pork Belly
Preheat the oven to 160°C (320°F). Place the pork belly on a baking tray and roast for 2 hours, or until tender. Increase the oven temperature to 220°C (428°F) and roast for an additional 30 minutes, or until the skin is crispy.

Rest and Slice
Remove the pork belly from the oven and let it rest for 15 minutes. Slice into thin pieces.
