Cooking Instructions

  1. 1

    Caramelize the Onions

In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 30-40 minutes until the onions are caramelized and golden brown.

  2. 2

    Add Broth and Seasoning

Once the onions are caramelized, add the beef broth, thyme, bay leaf, and season with salt and black pepper. Bring the mixture to a simmer and cook for another 15-20 minutes.

  3. 3

    Prepare the Baguette

While the soup is simmering, slice the French baguette into 1-inch thick pieces. Toast them in the oven until golden brown.

  4. 4

    Assemble and Serve

Ladle the soup into bowls, place a slice of toasted baguette on top of each bowl, and generously sprinkle Swiss cheese over the bread. Place under the broiler for 2-3 minutes until the cheese is melted and bubbly. Serve hot.
