    Prepare the Turkey

    Preheat your oven to 180°C (350°F). Season the turkey breast with salt and pepper, then place it in a roasting pan. Roast for about 1 hour, or until the internal temperature reaches 75°C (165°F).

    Cook the Potatoes

    While the turkey is roasting, peel and chop the potatoes into even-sized chunks. Boil in salted water for about 15-20 minutes or until tender. Drain and mash with a little butter and milk if desired.

    Prepare the Green Beans

    Trim the ends of the green beans. In a pot of boiling water, blanch the green beans for about 3-4 minutes until bright green and tender-crisp. Drain and set aside.

    Make the Pan Gravy

    Once the turkey is done, remove it from the pan and let it rest. In the same pan, melt 2 tablespoons of butter over medium heat. Stir in 2 tablespoons of flour to create a roux. Slowly whisk in 500 ml of chicken broth, stirring continuously until the gravy thickens. Season with salt and pepper to taste.

    Serve

    Slice the turkey and arrange on plates with mashed potatoes and green beans. Drizzle with the pan gravy and serve with cranberry sauce on the side.
