Method

Sous Vide Rack of Lamb

Prepare the Lamb

Season the rack of lamb with olive oil, minced garlic, rosemary, salt, and black pepper. Vacuum seal the lamb.

Sous Vide Cooking

Preheat the sous vide water bath to 130°F (54°C) for medium-rare. Submerge the sealed lamb in the water bath and cook for 2 hours.

Sear the Lamb

After cooking, remove the lamb from the bag and pat dry. Heat a skillet over high heat and sear the lamb for 1-2 minutes on each side until browned.

Potato Gratin

Prepare the Gratin

Preheat the oven to 375°F (190°C). In a greased baking dish, layer the sliced potatoes, garlic, salt, pepper, nutmeg, and cheeses. Pour heavy cream over the layers.

Bake

Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes until golden and bubbly.

Grilled Green Beans

Prepare the Green Beans

Toss trimmed green beans with olive oil, salt, and pepper. Preheat the grill.

Grill

Grill the green beans for about 5-7 minutes, turning occasionally, until tender and slightly charred.

Demi Glace

Prepare the Demi Glace

In a saucepan, combine beef stock, red wine, and shallots. Simmer until reduced by half.

Finish the Sauce

Whisk in butter and season with salt and pepper. Strain if desired before serving.
