Fried Chicken
Method
Preparation
- 1
Marinate the Chicken
In a large bowl, combine buttermilk, salt, black pepper, cayenne pepper, garlic powder, onion powder, and paprika. Submerge the chicken in the marinade and refrigerate for at least 4 hours or overnight.
- 2
Fry the Chicken
Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C). In a separate bowl, combine flour, salt, black pepper, and cayenne. Remove chicken from marinade, allowing excess to drip off, and coat in the flour mixture. Fry the chicken in batches until golden brown and cooked through, about 15-20 minutes per batch. Drain on paper towels.
- 3
Prepare the Hot Sauce
In a saucepan over medium heat, combine blueberries, fig preserves, honey, apple cider vinegar, salt, and black pepper. Simmer for 10 minutes, stirring occasionally, until the sauce thickens. Remove from heat and let cool.
- 4
Make Cornbread Biscuits
Preheat the oven to 450°F (230°C). In a mixing bowl, combine cornmeal, flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in milk until just combined. Drop spoonfuls onto a baking sheet and bake for 12-15 minutes or until golden brown.
