Preparation of Seafood Stuffed Flounder

Make the Filling
In a bowl, combine shrimp, crab meat, breadcrumbs, cream cheese, garlic, parsley, lemon juice, salt, and black pepper. Mix until well combined.

Stuff the Flounder
Preheat the oven to 375°F (190°C). Place flounder fillets on a baking sheet. Spoon the seafood mixture evenly onto each fillet and roll them up. Secure with toothpicks if necessary.

Bake the Flounder
Bake stuffed flounder in the preheated oven for 20-25 minutes or until the fish is cooked through and flakes easily with a fork.

Cook the Potatoes
Boil sweet and red potatoes in salted water until tender, about 15 minutes. Drain and set aside.

Blanch the Green Beans
In the same pot, blanch green beans for 3-4 minutes, then transfer to cold water to stop cooking.

Combine the Salad
In a large bowl, combine cooked potatoes, green beans, and sliced red onion. Drizzle with olive oil, salt, and pepper. Toss gently to combine.
Preparation of Mustard Vinaigrette

Mix Vinaigrette
In a small bowl, whisk together Dijon mustard, red wine vinegar, olive oil, honey, salt, and pepper until well combined.
Preparation of Beurre Blanc

Prepare the Sauce
In a saucepan, combine shallots and white wine. Simmer until reduced by half. Add heavy cream and cook for 2-3 minutes. Gradually whisk in cold butter until sauce is emulsified. Season with salt and pepper.
