Method
Preparation and Cooking
- 1
Prepare the Pecan Crust
In a mixing bowl, combine finely chopped pecans, melted butter, all-purpose flour, salt, and pepper. Mix until crumbly. Press the mixture into the bottom and sides of a pie dish to form the crust. Bake at 350°F (175°C) for 10 minutes or until lightly golden.
- 2
Cook the Filling
In a skillet over medium heat, sauté chopped onion and minced garlic until softened. Add sliced mushrooms and cook until they release their juices. Stir in the roasted sweet corn, cherry tomatoes, and white wine. Cook for an additional 3-4 minutes. Remove from heat.
- 3
Wilt the Greens
In the same skillet, add fresh greens and cook until just wilted. Combine with the corn and mushroom mixture. Season with salt and pepper to taste.
- 4
Assemble the Pie
Layer the wilted greens and corn mixture in the prepared pecan crust. Crumble goat cheese on top, then drizzle with truffle oil.
- 5
Bake the Pie
Bake the assembled pie in the oven at 350°F (175°C) for 25-30 minutes, or until the cheese is melted and the pie is heated through.
