Make the Dough
In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms. If too sticky, add more flour as needed.

Shape the Gnocchi
Divide the dough into smaller pieces. Roll each piece into a long rope about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges on one side.

Cook the Gnocchi
Bring a pot of salted water to a boil. Drop the gnocchi in batches; once they float to the surface, cook for an additional 2 minutes. Remove with a slotted spoon.

Prepare the Sauce
In a blender, combine roasted garlic, habanero pepper, and heavy cream. Blend until smooth. In a saucepan, heat olive oil, then add the cream mixture. Simmer on low for 5-7 minutes.

Combine and Serve
Add the cooked gnocchi to the sauce and toss to coat. Stir in grated Parmesan cheese and season with black pepper. Garnish with fresh parsley before serving.
